Chocolate Seed Bites
2 dozen -1 inch round bites
12 Large pitted Medjool Dates
12 Unsulfured Apricots
2 Tablespoons Coconut Milk, Water or Orange Juice
1/4 cup hulled Hemp Seeds
2 Tablespoons Chia Seeds
1/4 cup Super Grains (Red Quinoa, Millet and Buckwheat)
1/4 cup Cocoa Powder
1/2 teaspoon Vanilla Extract
1/2 teaspoon Cinnamon
1 Orange (zest)
1/4 cup Dark Chocolate Chips or Cocoa Nibs
Shredded Unsweetened Coconut (for rolling)
Chop the Dates and Apricots into small pieces.
Place the Water or Coconut Milk and the Banana into a tall 2 quart container and puree with an emersion blender until smooth. Add half of the Dates and Apricots and blend pulsing a few time to chop up the dried fruits a little bit more.
Add the remaining ingredients and stir with a spatula until all ingredients are fully mixed together and the it forms into a paste.
Portion out small 1 inch rounds of the mixture on a sheet pan and roll between the palms of your hands into rounds. Roll in Coconut until lightly covered.
Place in the refrigerator to firm up. Store in an air tight container for up to a week.
These special treats are an unique blend of dried Fruits, Grains from Whole Foods, Coconut and Chocolate. Eat them as a quick morning breakfast or an afternoon pick me up. Not to sweet and not too healthy tasting either but satisfying and nutritious without any guilt.
Play around with the recipe adding or taking away the liquid or replacing more fruits, banana or chocolate depending on your preference. They should easily roll up into balls and if you want added seeds try rolling them in Trader Joe’s super seed mix.
